1. Shrimp Scampi

Here is a delicious dish which is easy to make and will delight all sea food lovers.

Prep Time: 10 -12 minutes Cooking Time: 20 minutes

Esgee’s Christmas Fare
  • 1 packet spaghetti
  • 3 tbsps butter/olive oil
  • 15-20 shrimps [cleaned washed and deveined]
  • 6 garlic cloves minced
  • 1 tsp parsley minced [for the garnishing]
  • ½ lemon zest
  • 1 tsp chili flakes

In a large pot of salted boiling water, cook spaghetti until al dente. Drain, reserving 1/2 cup pasta water, and return to pot. Meanwhile, in a large skillet over medium heat, melt butter. Add garlic and cook until fragrant for a minute. Then add shrimp and cook until pink [3 minutes]. Add lemon juice and zest, and red pepper flakes. Season it with salt and pepper. Add spaghetti and toss to coat, adding reserved pasta water 1 tablespoon at a time until saucy. Garnish with parsley before serving. Shrimp Scampi is ready!

2. Roast Chicken

This is a succulent, buttery, herby roast with which you can’t go wrong, a delightful, classic chicken.

Prep Time: 15 minutes Cooking Time: 1 and a ½ hours

Esgee’s Christmas Fare
  • 1 whole chicken washed and cleaned
  • 50 grams butter
  • A handful of herbs like basil and thyme
  • 1 tsp pepper powder
  • Lemon
  • 12 cloves garlic

Wash and clean out the chicken whole. Turn it over and brush the chicken with melted butter and rub garlic all over the chicken. In a small bowl, mix together salt, lemon, pepper, dried basil, and dried thyme [optional]. Pierce the chicken all over using the sharp point of a knife. Rub the marinade onto the chicken. Add salt inside too, and put some garlic cloves in there, as well as half of a lemon and some herbs. Tie the legs together with twine and tuck in the wings under the chicken. Then roast the chicken uncovered. It should take between an hour and an hour and a half in an oven at 250 deg C. Check if cooked well as it begins to brown at the end of an hour.

PS. In a festive mood you might like to add some white wine to the marinade. It makes it more flavorsome!

3. Date Pudding

Give a twist to the dessert you serve. Christmas cakes are irreplaceable and forever, of course. Yet do try this interesting steamed pudding.

Esgee’s Christmas Fare
  • 2 cups dates [deseeded and chopped]
  • ¾ cup butter
  • 1 ½ cups bread crumbs
  • ½ cup sugar
  • 1 egg beaten well
  • 2 tbsps flour
  • 1 tsp baking powder

Grind the dates to a fine paste in a blender and set it aside in a bowl. Cream together the butter and sugar. To this add the bread crumbs, egg, flour and baking powder. Then put in the date mixture and combine thoroughly. Pour into a greased dish. Cover tightly and steam for 2 hours.

Serve hot with custard.
