Chocolate Brownies


Brownies are square baked chocolate cakes loved world over. What makes them special is that they may be fudgy or cakey depending on the density. Originating from the US, brownies are popular with both the young and old. They may be made with frosting, nuts, chocolate chips and many other ingredients. Three quick recipes to delight your family and friends.

1. Easy Chocolate Brownies

Easy to make, this simple recipe is a time tested one where you really can’t go wrong.

Prep Time: 15 minutes Cooking Time: 25 minutes

  • 400 grams chocolate
  • ¾ cup butter
  • 1 ¼ cup sugar [powdered]
  • 2 eggs
  • ¾ cup flour [wheat or all purpose flour]
  • ¼ cup cocoa powder
  • ¼ teaspoon salt
  • 200 grams chocolate chips [optional]

Melt chocolate, sugar and butter in a double boiler. Sieve together flour and cocoa. Mix dry ingredients into butter mixture. Beat well. Add salt and eggs. Mix thoroughly and add choco chips. Pour into a greased tray. Bake in a preheated oven at 180 deg for 25 minutes.

Cool and cut into squares.

2. Ragi-Wheat Choco Brownies

This is a brownie using millets - a healthier option and a different flavor.

Prep Time: 10 minutes Cooking Time: 30 minutes

  • 125 grams chocolate
  • 50 grams butter
  • ¾ cup powdered sugar
  • ½ cup ragi flour [finger millet]
  • ¼ cup wheat flour
  • 1 tablespoon cocoa powder
  • ½ cup fresh curd [unsour]
  • 8-10 walnuts chopped
  • 1 tsp vanilla essence

Combine butter and chocolate in a double boiler and set aside.

In a bowl beat together curd and sugar. To this slowly add the choco butter mixture. Add the vanilla essence and half the quantity of chopped nuts.

Sieve together wheat, ragi and cocoa. Add this gradually to the butter mixture and combine well.

Pour into a greased tray. Sprinkle walnuts over the top. Bake in a preheated oven at 180 deg for 30 minutes.

Cool and cut into squares/rectangles.

3. Fudgy Brownies

These gooey, fudgy brownies are to die for! No regrets here…..

Prep Time: Cooking Time:

  • 200 gms chocolate
  • 12 tablespoons butter melted
  • 250 gms sugar
  • 2 tsps vanilla essence
  • 2 eggs
  • 100 gms all purpose flour
  • ¼ cup cocoa powder
  • ¼ tsp salt

Melt the chocolate in a double boiler. In a large bowl combine butter and sugar well. Add eggs and essence and beat thoroughly. Whisk in the chocolate [ensure it’s not too hot-allow to cool]. Next add the flour, cocoa and salt. Fold in carefully. Do not over mix or it will be more like a cake. Transfer into a greased baking tray.

Bake in a preheated oven for approximately 20 minutes. How long you bake it will depend largely on how gooey you would like your brownie to be. Between 20-25 minutes should be ideal.

Cool and cut into pieces. Equally yummy with a hot cup of coffee or a cold glass of milk!!
