Hearty Soups


Soups are forever, they never leave the diner’s table. Some soups are clear and light, some thick and rich and some a whole meal in itself. Try these nutritious soups and watch your family relish them.

1. Quinoa and Vegetable Soup

Wholesome and delicious, this soup can be made with the vegetables of your choice.

Prep time: 15 minutes Cooking time: 40 minutes

  • ½ cup quinoa
  • 1 onion chopped small
  • 2 flakes garlic chopped/ garlic powder
  • 4 green beans chopped
  • 2 carrots chopped
  • 1 potato chopped [optional]
  • ¼ cup celery chopped
  • 2 tomatoes chopped
  • 3 cups vegetable stock/chicken stock
  • 2 tbsps olive oil/veg oil
  • Salt and pepper powder
  • ½ cup chopped greens [of your choice-kale, spinach, etc.]
  • ½ teaspoon cumin powder
  • 1 inch piece of cinnamon
  • 1 teaspoon lemon juice
  • 2 cups water

In a large pot heat oil and sauté onion, garlic and cinnamon lightly. To this add the chopped vegetables and sauté for two minutes. Add water and cook for about 10 minutes. Add salt and pepper to taste. Next put in the quinoa and cumin powder. Add the stock and cook well until quinoa is tender [about 12-13 minutes]. Finally add the greens and cook for a minute more. Turn off the flame add lemon juice and stir well. Serve the soup hot.

2. Chicken and Barley Soup

A hearty main dish, this soup is delicious as it is nutritious!

Prep Time: 20 minutes Cooking Time: I hour

  • 1 cup pearl barley
  • 2 onions chopped
  • 2 carrots chopped small
  • 5-6 garlic flakes chopped/garlic powder 1 tsp
  • 1 broiler chicken washed and cut into small pieces
  • 2 cloves
  • 1-2 bay leaves
  • 1 cup chopped celery
  • Salt and pepper to taste

Cook chicken in a large pot with water and salt. Cool and skim off the fat at the top. Debone and set aside. Cut the meat into small pieces. Into the chicken stock add all the ingredients and cook till barley is well done. Add the chicken pieces and boil for 3 minutes. Remove bay leaves. Check for flavor and add more pepper if required. Serve hot.

PS. Instead of carrots, you may like to add other vegetables of your choice.

3. Broccoli and Cheddar Soup

Green and deliciously flavored, this soup is always a hit

Prep Time: 15 minutes Cooking Time: 20-25 minutes

  • 1 broccoli broken into florets
  • 1 tsp garlic powder
  • 2 tsps cream/ fresh yogurt beaten well
  • 1 onion chopped small
  • Cinnamon stick
  • Salt and pepper powder

Cook the broccoli and in a little water with salt and a cinnamon stick. Cool and blend in a food processor after removing the cinnamon stick. Transfer the puree into a pan, add garlic powder and bring to boil. Sprinkle pepper powder. Stir in the cream [optional]. Remove from flame and top with grated cheddar. Serve hot.

PS. Roasting the broccoli instead of boiling it gives the soup a nice smoky flavor.
