Three cheese filled recipes to warm your heart and satisfy your palate. Yummy appetizers, snacks or side dishes, the choice is all yours

1. Cheesy Potato Balls

Prep Time: 15 minutes Cooking Time: 15 minutes

Easy and Cheesy
  • ½ kilogram potatoes cooked, peeled and mashed
  • 1 large onion chopped fine [optional]
  • 2 garlic flakes crushed/ garlic powder ½ teaspoon
  • ½ teaspoon pepper powder
  • 1 egg
  • Cheese Cheddar/ Mozzarella
  • ½ cup flour
  • 1 cup bread cups for outer crust
  • Oil for frying
  • Salt

In a large bowl combine mashed potatoes, onions, salt, pepper, garlic and half quantity of flour thoroughly. Add the grated/ crumbled cheese and mix lightly with finger tips. Roll into small balls and set aside. Beat the egg in a shallow dish. Dip each ball into it and cover with bread crumbs. Deep fry them to a golden brown. Serve warm with tomato ketchup or chutney.

PS. For variety you may like to add some boiled peas or corn to the potato mix. These vegetables team well with the cheese balls.

2. Parmesan Zucchini Bites

Prep Time: 10 minutes Cooking Time: 15 minutes

Easy and Cheesy
  • 3 zucchinis sliced diagonally about ¼ inch thick
  • Garlic powder
  • Salt
  • 1 tablespoon olive oil/vegetable oil
  • ½ cup Parmesan cheese, grated
  • ½ teaspoon chili flakes/paprika

Cut the ends of the zucchini and slice them diagonally into ¼ inch thick slices. Arrange them single layer on a baking dish/plate. Sprinkle with garlic powder and salt. Flip each piece over so that salt is on the bottom. Brush the top of each piece with olive oil. Sprinkle parmesan over the top as generously as you would like. Top with chili flakes/paprika. Bake this for about 10-12 minutes at 250 deg C or till the cheese melts.

3. Grilled Cheese Rolls

Prep Time: 5 minutes Cooking Time: 10 minutes

Easy and Cheesy
  • 4 bread slices [cut the edges for best results]
  • 4 slices of cheese/ ½ cup grated cheese of choice.
  • ½ teaspoon oregano [optional]
  • Pepper powder
  • A little butter/ olive oil for grilling

First take the bread slices and gently roll them with a rolling pin to flatten them out. Onto each of these, place the cheese slice, sprinkle oregano and pepper powder and roll. Set aside with seam facing down. Do this with all the bread slices. Brush each roll with butter/oil. Cut each roll into half. Place skillet on medium flame and put some butter into it. Place the rolls into it seam down. Grill gently and allow the cheese to melt and seal the ends. Turn over till rolls are crispy and golden. Serve warm while cheese is still gooey. This is finger licking yummylicious!
