Ginger the Gem!


Ginger is a popular ingredient in cooking especially in Asia. It has a distinct flavor and has many medicinal properties. It is good for curing nausea, helps in digestion, relieves pain and inflammation and is good to fight a cold. This rhizome/underground stem can be consumed fresh or dried. Ginger is used to make teas, savories, curries and confectionery too. Scientific analysis shows that Ginger contains hundreds of compounds and metabolites which may contribute to health and healing. These recipes come your way to promote good eating and better health.

  1. Sweet Ginger

Prep Time: 15 minutes Cooking Time: 20 minutes

½ kg fresh ginger

½ cup white vinegar

2-3 desert spoons of sugar

A pinch of salt

Clean wash and dry ginger. Dice into 1 inch cubes. Immerse this in water and soak for about 12 hours. Then pressure cook the ginger with enough water to cover it. When done [2-3 whistles] remove ginger from cooker and wash it several times in cold water. Wipe ginger dry and set it aside.

In a pan, mix sugar with vinegar and boil. As it boils add salt. Toss in the ginger to the sugar syrup. Boil till all the syrup is absorbed. Remove from fire and cool. Bottle and use after a day.

  1. Ginger Pudding

Prep time: 15 minutes Cooking Time: 45-50 minutes

250 grams flour

1 teaspoon baking powder

¼ cup milk

200 grams sugar

200 grams butter/oil

4 eggs

2 teaspoons grated ginger

¼ teaspoon cinnamon powder

Sieve the flour and baking powder together. Mix the butter, sugar and eggs well till the butter is very soft and fluffy. Add flour to this mixture and combine well ensuring no lumps are formed. For this add flour slowly, one spoon at a time. Add the milk and next put in the grated ginger and cinnamon powder. Mix thoroughly.

Pour into a greased dish and bake in a pre heated oven for 45 minutes at 350 deg or till the top is golden brown. Check to see if cake is fully done by checking its centre. The tooth pick should come out clean.

Cool the cake and drizzle 2 teaspoons of caramelized sugar syrup/ brandy over it. Serve with vanilla custard. A delightful pudding!

  1. Ginger Chicken

Prep Time: 10 minutes Cooking Time: 20 minutes

500 grams chicken pieces [boneless preferably]

10-12 scallions/ spring onions

2-3 flakes garlic

1 teaspoon grated ginger

2 chilies

5-6 cashew nuts [optional]

½ cup Sesame oil

2 tablespoons wine [optional]

2-3 tablespoons Soya sauce

Marinate the chicken cubes in Soya sauce for 15 minutes. Cut the onions into thick pieces. Chop ginger, garlic and chilies into small pieces.

Heat oil in a pan and fry chicken pieces brown on either side. Do this on medium flame. Remove chicken when cooked, drain and set aside. Next, sauté onions, ginger, garlic and chilies for 2 minutes. Then put in the chicken, wine, Soya sauce and cashew nuts. Toss well together and serve with rice.
