Rice is Nice!


Rice is undoubtedly the most commonly consumed grain in the world. There are said to be more than 40,000 varieties of rice in varying shapes, sizes colors and flavors! It is the most popular cereal especially in Asia. Here are some simple Rice recipes to add to your table.

1. Coconut Rice

This recipe entails using coconut milk which makes the rice flavorsome and special.

Prep time: 15 minutes Cooking time: 20 minutes

  • 1 cup rice [Basmati/ Jasmine rice is best!]
  • Milk extracted from I coconut [approx 3 cups]
  • ¼ cup grated coconut
  • A few cashew nuts and raisins [optional]
  • 1 teaspoon cumin seeds
  • 1-2 tbsps butter/ ghee
  • Salt to taste
  • For seasoning: ½ teaspoon mustard seeds, ½ teaspoon black gram/urad dal

First fry the cashew nuts and raisins in some ghee and set them aside. In the same pan add some more ghee and fry the cumin. To this add the washed rice and fry for 3-4 minutes. Add coconut milk and salt. Cook on low flame till soft and tender with lid on. All the coconut milk has to be absorbed. If the rice seems moist, remove lid and cook open for 2 more minutes stirring it gently. Add the cashew nuts and raisins and mix.

Season the rice with mustard seeds and black gram [optional].

Sprinkle the grated coconut over the top and serve!

2. Mexican Fried Rice

A delicious tomato based rice preparation with or without meat-equally a tasty treat!

Prep time: 15 minutes Cooking time: 15 minutes

  • 2 cups cooked rice
  • 2 tbsps olive oil/ veg oil
  • 2 flakes of garlic minced
  • 1 large onion chopped fine
  • 1 bell pepper chopped [red/green or yellow]
  • ½ cup cooked black beans [canned beans will do well]
  • ½ cup cooked corn kernels
  • [If you wish to add to the protein shredded chicken, meat, pork, etc may be added]
  • 5-6 tbsps enchilada sauce/ tomato paste
  • ¼ teaspoon cumin powder
  • 1½ teaspoons of red chili powder
  • ½ teaspoon pepper powder
  • Salt to taste

[Combine all sauce ingredients with 2 tbsps of water in a bowl and keep aside.]

Heat oil in a pan and add garlic. As it begins to give off an aroma add onions and capsicum and fry for 2 minutes. Add beans, corn and meat [if using any]. Stir well. Add rice and sauce and combine well to ensure that the rice is covered with sauce. Check for flavor and adjust salt and chili. Sprinkle over with pepper powder and serve hot.

3. Rice Pudding

This is a creamy, delicious rice pudding which may be eaten hot or cold.

Prep time: 10 minutes Cooking time: 15 minutes

  • 2 cups cooked rice
  • 1 litre milk [approx 6 cups]
  • ½ teaspoon cinnamon powder
  • 1 tablespoon butter [unsalted]
  • ¾ cup sugar
  • 1 teaspoon vanilla extract

Add 2 cups cooked rice to a pan. Add milk to it and stir well. Next add all the other ingredients and cook till the mixture thickens. Taste for sweetness and add more sugar if needed. Sprinkle a little cinnamon powder over the top. Serve hot or cold. This is a light and delicious dessert, ideal to round off a meal.
