Pancakes have been around for a long, long time. Sweet, fluffy and super soft pancakes are a go-to food whether for breakfast, lunch or dinner. Given below is the basic recipe for a light and delicious pancake along with some other varieties.
1. Simple Traditional Pancake
Prep time: 10 minutes Cooking Time: 12 minutes
In bowl whisk together flour, sugar, baking powder, salt and nutmeg powder. In another bowl beat together eggs, milk and vanilla extract. Add dry ingredients to milk and combine well. The batter will be thick. Melt a little butter in a griddle on medium flame. Pour a ladle full of batter to make a thick round on the heated griddle. Cook for nearly two minutes and flip over to cook the other side. Cook for nearly two minutes more on medium flame and remove. Put a little butter along sides of pancake while cooking. Repeat till all the batter is over. Serve hot with honey, jam or Maple syrup.
Custard stuffed pancakes with sauce for a delicious dessert.
Make pancakes as above but spread the batter thinly and fill with thick vanilla custard. Roll/ fold the pancakes and place on a plate. Drizzle caramel sauce/ chocolate sauce, etc. [any sauce of your choice] and serve warm. Perfect for a rainy or winter evening dessert!
2. The Three Ingredients Pancake
No complicated steps, no separating eggs, just one bowl, one spoon and 3 ingredients. So easy peasy!
Prep time: 10 minutes Cooking time: 15 minutes
Whisk eggs and milk to combine. Add flour and continue whisking to get a smooth batter. Pour batter a ladle at a time and cook for 1-2 minutes each side.
Serve with Maple syrup, honey, Sliced bananas, berries, whipped cream or any topping of your choice.
3. Chocolate Pancakes
This is especially for the chocolate lovers….
Prep time: 10 minutes Cooking time: 10-12 minutes
Mash bananas thoroughly and mix well with eggs, oats, chocolate and cocoa and cinnamon powders in a blender to get a smooth batter. Pour the batter onto a greased griddle to make small, round, brown pancakes. Cook each side for about a minute and a half. Place on a plate for serving and top with sliced fruit. Drizzle syrup or honey when serving. Lip smacking!!
