Walnuts, like all other nuts contain good fat and are also an excellent vegetarian source of Omega 3 fatty acids. They also contain calcium, zinc, iron selenium, vitamin E and Vitamin B. Here are 3 recipes with walnuts.
1. Walnut and Apple Salad
An easy to do salad which is nutritious, refreshing and delicious!
Prep time 10 minutes Cooking time: 10-12 minutes
Whisk lime juice, salt, sugar and curd. Add chopped walnuts. Pour half of this mixture over the apple and carrots in a bowl. Allow to stand and soak well [approx 10 minutes]. Top with remaining curd just before serving. Garnish with a few walnuts. Refrigerate before serving.
2. Walnut and Banana Bake
Prep time: 10 minutes Cooking time 25 minutes
In a bowl mash the ripe bananas well.To this add sugar, egg, flour, butter, vanilla extract and walnuts. Combine well. Pour into a greased pan and bake at 180 degrees till top is golden brown. [approx 25 minutes]. Cut into squares and serve.
3. Walnut Fudge
Prep time: 7 minutes Cooking time: 15 minutes
In a pan, put water, milk and sugar over moderate heat and stir. Next add the soda powder.Then add the walnuts and butter and keep stirring. Wait till the mixture turns into soft ball consistency stirring all the while. Turn off flame. Beat/whisk well till thick and creamy. Pour into a greased container/ plate. Cool and cut into squares.
