Two Vegetable Combos - 2


Here are three more great vegetable combinations to try out this week. Colourful and flavoursome they will make your meals ever so great!

1. Zucchini and Corn Delight

This is a recommended side dish to go with any meat or vegetable main course dish which is tasty and ever so easy to make.

Prep time: 10 minutes Cooking time: 10 minutes

  • ½ cup cooked corn kernels
  • 1 medium sized zucchini chopped into ½ inch thick small pieces
  • 1 onion sliced finely
  • 3 flakes garlic crushed/ ¼ teaspoon garlic powder
  • 2 teaspoons vegetable oil/olive oil
  • A pinch of pepper powder
  • 2-3 tablespoons of grated parmesan cheese/ powder
  • Salt to taste

In a pot cook the corn in salt water [approximately 6-7 minutes]. Drain and set aside. In a pan add the oil and sauté the garlic for a minute. Then add the onion and continue sautéing for 2 minutes. Put in the zucchini pieces and continue stirring. Next add the cooked corn, salt and pepper. Add the cheese and mix thoroughly. Remove from fire and serve hot.

P.S. Fried peanuts may be added to this dish to give an added crunch.

2. Carrots and Beans Poriyal/Fry

[Cuisine: South Indian]

Prep time: 15 minutes Cooking time: 20 minutes

  • 1 cup chopped carrots
  • 1 cup chopped beans
  • 1 onion chopped small
  • 1 green chili cut into small rounds
  • ¼ cup grated coconut
  • ¼ teaspoon mustard
  • ½ teaspoon urad dal[white]
  • ½ teaspoon channa dal
  • A sprig of curry leaves
  • 2 teaspoons vegetable oil/ coconut oil preferably
  • Salt to taste

Cook the carrots and beans in salt water and drain. Set vegetables aside. In a pan pour the oil and crackle the mustard seeds first. Next add the urad dal, channa dal and curry leaves and stir fry. Put in the green chili, cooked beans and carrot pieces. Mix well and adjust salt to taste.

Sprinkle coconut gratings and remove from fire.

This Poriyal is best eaten with Rice and dal/Sambhar.

3. Spinach and Mushroom Italian Style

This is a simple and typical Southern Italy recipe- Delicious!

Prep time:15 minutes Cooking time:15 minutes

  • 4 teaspoons olive oil
  • 1 onion chopped into small pieces
  • 3 garlic flakes chopped
  • 1 tablespoon balsamic vinegar
  • ¼ cup white wine
  • 2 cups fresh mushroom sliced
  • A medium bunch spinach washed and roughly chopped
  • ½ teaspoon pepper powder [fresh]
  • Salt to taste

Add oil into a large pan and fry the garlic and onion pieces for a minute. Then add the mushroom and continue sautéing [3 minutes approximately]. The mushrooms will begin to shrink. At this point put in the chopped spinach and stir fry. Add salt and pepper powder. When spinach begins to wilt add the vinegar and stir constantly till it is absorbed. Next add the wine and keep stirring on a low flame till it is almost completely absorbed. Check salt and pepper flavouring and serve hot.
