Lychees

These small tree fruits look like raspberries with stems, but their hard outer shell isn't the part you want to eat. Peeling off the red and pink layer exposes a fleshy white fruit inside with a seed at the centre. Lychees are popular in Asia, their native growing place. Sweet to taste, they have a soft texture and pleasant fragrance.

Here are some quick to do recipes with Lychees.

1. Chocolate Lychees

Lychees
  • 250 grams lychees washed and shelled
  • 8-10 small pieces of ginger
  • Chocolate for coating the lychees [2 medium bars]

Line a shallow baking tray with parchment paper. Pat the washed lychees dry. Make a slit on each lychee, remove the inner seed and push a little piece of ginger into centre of each lychee.

Place the chocolate in bowl over a saucepan of simmering water for 5 minutes. Stir until chocolate melts. Remove bowl from heat quickly dip each lychee into chocolate one at a time. Place onto prepared sheet and chill for an hour before serving. The chocolate coating would have firmed up giving the fruit a delicious flavor. The ginger inside accentuates the delicate flavours and contrasts with the sweetness beautifully. If you want to make your presentation exotic, place each coated lychee on a rose petal in a crystal/ silver plate.

2. Tropical Lychee Salad

Lychees
  • 2 Tbs. butter
  • 2 Tbs. brown sugar
  • ½ Tbs.ground ginger
  • 2 Tbs. light rum [optional]
  • 1 cup of fresh lychees

Peel, pit and slice lychees into bite-sized portions and place in bowl. Combine butter, brown sugar and ginger in a large flat pan. Place pan over low heat until butter is melted. Add fruit and saute briefly until fruit heats through and gives out juice. At this point pour in the rum and remove pan from heat. [Alternately you may like to add 2 tablespoons of molasses and a squeeze of lemon] Serve salad warm at room temperature.

3. Lychee Smoothie

A cool .delicious drink which is easy to prepare

Lychees
  • 6-8 lychees peeled and seed removed [Chill in refrigerator for at least an hour]
  • ¼ cup curd
  • ¼ cup milk
  • ½ banana chopped
  • 1 Tsp honey
  • Lemon wedges

First cream the fruit in a blender pouring in the curd. Next put in the milk, banana and honey and blend to a smooth consistency.

Your Smoothie is ready! Serve chilled with lemon wedges.
