Let’s Fudge

A fudge is a soft crumbly, chewy, sweet made from sugar, butter and milk. It is a chewy soft toffee. It is easy to make and delicious and an all time favourite.

1. Chocolate Fudge

Prep time: 5 mins Cooking time: 12-15 mins

  • ½ kg sugar
  • 3 tbsps cocoa
  • 50 gms butter
  • ¾ tin condensed milk
  • ½ tin water
  • 1 tsp vanilla essence

Stir water, milk and cocoa together in a heavy bottomed pan. Next add sugar, butter and vanilla. Keep stirring. Cook till soft ball stage. Then remove from flame and pour into a greased plate. Allow to cool. Cut into squares when nearly set.

2. Milk Fudge

Prep Time: 5 mins Cooking time: 20-25 mins approx

  • 1¼ cups milk
  • 3 cups sugar
  • 100 gms butter
  • 2 tsps vanilla essence

Pour milk into a heavy pan and bring to boil. Add sugar and butter stirring all the time. Keep stirring until the milk thickens [approx 15 mins]. Add the vanilla. Cook until soft ball consistency. Remove from heat and beat the fudge with a whisk until it loses its gloss and gets thick. Pour into a greased plate. Mark squares when completely cool. Cut only when firm. Put the fudge in an airtight container and store.

3. Caramel Fudge

Prep time: 5 mins Cooking time: 25-30 mins

  • 150 gms butter
  • 500 gms sugar
  • 2 tsps vanilla essence
  • 250 ml milk
  • 1 tin condensed milk

Put the butter and sugar into a pan and stir till it turns brown and caramelizes. Next add the milk, condensed milk and essence. Keep stirring continuously for about 15 minutes when the mixture thickens. As you stir it further, the colour will change to brown. Pour this into a pan that has been greased and lined with butter paper. Allow it to cool. Refrigerate for at least 6 hours before cutting and serving this chewy, tasty fudge.
