Cakes ‘n’ Bakes

These cake recipes are tested and tried and are all sure shot super cakes.

1. Coconut Cake

  • I cup grated coconut
  • 1 ½ cups sugar
  • 1 ½ cups semolina [sooji rava]
  • ¾ cup flour
  • 1 ½ tsp baking pwdr
  • 1 tsp. salt
  • 200 gms butter/ veg oil
  • 4 egg yolks
  • 4 egg whites
  • 1 tsp vanilla essence

In a pan pour 1/3 cup water and place on fire. Put the sugar into it and when melted remove from flame. Allow to cool for 5 minutes and then add the semolina and flour mixing well so that no lumps are formed. Then add baking powder, butter and salt. Mix in the egg yolks and then add the grated coconut. Beat the egg whites stiff and fold them into this mixture. Add the vanilla essence. Mix gently. Pour the batter into a greased tin. Bake in a preheated oven at 200 degrees for 35 minutes. Your Coconut cake is ready.

P.S. Test if centre of cake is cooked by piercing with a knife or needle. It must come out clear. If sticky, bake for another 5 minutes. Use this test always when baking cakes.

2. Banana and Nut Cake

  • 2 ripe bananas
  • ½ cup chopped nuts [walnuts, cashew nuts, almonds or any nuts of your choice]
  • 1 egg
  • ¾ cup powdered sugar
  • 11/4 cups flour
  • ½ tsp soda bi carbonate
  • ¾ tsp baking powder
  • 1/3 cup melted butter
  • ¼ cup milk

Beat the egg well and add the powdered sugar to it. Whisk continuously for a minute. Sift flour with soda bi carb and baking powder. Mash the ripe banana and mix with the butter. Add flour to the banana mixture. To this add milk. Lastly add the egg and sugar. Mix well. Now add the nuts and then pour into a greased baking tin or bowl. Bake for 45 minutes at 220 degrees. A golden brown cake will come out.

3. Coffee Cake

  • 200 gms flour
  • ½ tsp baking powder
  • ½ tsp soda bi carb
  • 250 gms butter
  • 250 gms powdered sugar
  • 4 eggs
  • 2 dsps instant coffee powder
  • 1 tsp vanilla essence

Sieve the flour, baking powder and soda bi carb. Cream the butter, sugar and eggs into a fluffy mixture. Add the coffee powder and keep mixing. Put in the sieved flour and keep folding the batter. Add the vanilla essence and nuts. Pour into a greased cake dish and bake at 200 degrees for 40 minutes in a preheated oven. A delicious Coffee Cake is ready.

P.S. All these cakes lend themselves well to icing. Whether you opt for Butter Icing or Royal Icing is your choice.
