1.Choco Fudge Brownies

Prep time: 15mins Cooking time: 55mins

  • A little butter for greasing dish
  • 200 gms dark cooking chocolate chopped coarsely
  • 200 gms butter
  • 3 eggs
  • 2 egg yolks
  • 11/4 cup sugar
  • ¾ cup flour
  • 1/3 cup cocoa

Pre heat oven to 160 deg. Brush the base of a rectangular baking pan with butter and set aside. Melt chocolate and butter in a double boiler and stir well. Allow to cool.Whisk together eggs and egg yolks. Add this egg mixture to to the cooled down chocolate and combine. Now add the sugar and flour into a bowl . Sift in the cocoa powder. To this add the chocolate mixture and stir gently till just combined. Do not over stir as this will make the Brownies hard. Pour into the greased pan and bake for about 45 minutes.

These Brownies turn out rich and moist.

P.S. Over baking makes them dry.

2. Choco Cake

Prep time: 15 mins Cooking time: 35 mins

  • 2 cups sugar
  • 1 3/4 cup flour
  • 3 tsps cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 1 cup milk
  • ½ cup veg oil
  • 2 tsps vanilla extract
  • ½ cup water

Pre heat oven to 350 deg. Grease cake pan.Stir together all the dry ingredients- sugar, flour, cocoa powder,baking pwdr, baking soda and salt. To this add 2 eggs and mix well Next put in the milk, water and veg oil. When well combined add the vanilla extract. Pour batter into pan. Bake for 30-35 mins or till the centre comes out clean when poked. Allow cake to cool. Frost with chocolate, vanilla or orange icing.

Frosting with butter cream- this is a rich delectable topping for cakes. The colour and flavour may be changed as you like.

  • 3 cups icing sugar
  • 1 cup butter[unsalted]
  • 1 tsp vanilla extract
  • 1-2 whipping cream[optional]

Mix all ingredients together and evenly spread it all over the cake and it’s sides. Allow to set before serving.

If you wish to make the cake richer you may cut the cake horizontally to get 2 flat pieces and smear the icing on one half and then place the other over it. Press down gently to firm it up. Allow to set fully before serving.

3. Choco Ball

Prep time: 20 mins Cooking time: 5 mins

  • 1 cup crushed Marie biscuits
  • ¾ cup unsalted butter
  • 1 cup chopped dry fruits and nuts [candied peel chopped, raisins, walnuts crushed, pine nuts, cashewnuts chopped, etc.]
  • ½ cup cocoa powder
  • 2 eggs
  • 1 cup sugar powdered
  • 1 tsp vanilla extract
  • A sheet of silver foil for covering

Break and whisk the eggs in a bowl. Add all the other ingredients and combine well. Grease your palms and roll the mixture into a chocolate ball Wrap in foil and freeze for at least 24 hours. When taken out it can be sliced and served with or without ice cream.

P.S. 2 teaspoons of Brandy or Rum added to the mixture adds to the flavour and cheer!
