1. Mushroom Pate
Prep time: 20 Mins Cooking time 10-12 mins
Clean, wash and chop mushrooms. In a pan, put in Olive oil with garlic and onion slices. Fry well. To this add the mushrooms and keep stirring. The mush rooms will let out water and will reduce in size when done. Lower the flame; add salt, pepper and soya sauce. Once the mushrooms are cooked, turn off the flame and allow it to cool. Place this in a small mixture and grind to a fine paste. Your Pate is ready.
P.S. This makes an excellent topping for bread, croutons, crackers, etc and a sumptuous filling for sandwiches.
2. Mushroom Pepper fry
Prep time 15 mins Cooking time 20 Mins
Heat 2 tbsp oil and crackle mustard seeds. Add sliced onions and sauté on low flame till they turn golden. Add ginger garlic paste and fry. Now add mushrooms and keep frying. Next put in sliced capsicum and green chilli. Mix well. Add coriander powder, cummin and turmeric powder. Mix spices well with mushrooms and capsicum. Add salt to taste. When mushrooms are done, turn off the flame. Sprinkle chopped coriander leaves. Serve hot.
P.S. Best with chappatis or parathas.
3.Spicy Grilled Mushroom
Prep time 20 mins cooking time 20 min
Mix well all the ingredients and add the mushrooms at the end. Allow to marinate for 20-22 minutes. Skewer the mushrooms and grill in oven for 20 minutes at 200 degrees.
