1.Egg kofta in tomato sauce

For the tomato sauce
To prepare tomato sauce: Mix all the ingredients and simmer till tender and keep aside.
Halve the eggs lengthwise. Carefully remove the yolks and keep aside. Crumble the bread slices and soak in cold water. When soft, drain and squeeze the water out and mash well. Mash the egg yolks and add to the mashed bread. Add 1 tbsp of ghee, chopped onion, green chili and salt and mix well. Spoon in this mixture to fill the egg white hollows. Place the stuffed egg whites in a flat ovenproof dish and pour tomato sauce over them. Bake in an oven at 180 degrees till the sauce simmers. Remove and serve immediately.
2.Creamy Egg Curry
Prep time: 15 mins Cooking time: 15 mins
Peel and halve the eggs, lengthwise. Grind onion, green chili, and ginger to a paste. Heat oil in a sauce pan and fry ground masala for a min. Put in eggs and continues to fry until masala turns brown. Add milk and salt to taste. When milk starts to boil and add chopped coriander and simmer till gravy thickens. Finally sprinkle garam masala.
3.Egg n Potato Salad
Prep time: 15 mins Cooking time: 10 mins
In a large bowl, mix together eggs, potatoes, mayonnaise, salt and pepper. Next add chopped celery and mix. Cool in refrigerator for atleast an hour before serving.
